Preheat oven to 350°F. Grease a 9x13-inch baking dish with butter. 2. In a medium bowl, whisk together milk and flour until smooth. Stir in garlic, salt and pepper. Place fish pieces in bowl and coat evenly with milk mixture. 3. Spread fish in baking dish. Sprinkle with shredded cheese. Dot with butter. Bake for 25 minutes or until fish are cooked through and cheese is melted and bubbly. Sprinkle with fresh parsley before serving.

2 tsp. garam masala*

1 tsp. ground cumin

1/2 tsp. chili powder

3 tbsp. olive oil, divided

1 large onion, chopped

3 cloves garlic, minced 2 cups chicken broth 1 (14 oz) can diced tomatoes, undrained 1/2 cup coconut milk 2 tbsp. grated fresh ginger 1/4 cup chopped fresh cilantro Salt and pepper to taste

TO ASSEMBLE: Preheat oven to 350 degrees F (175 degrees C). coat an 11x13 inch baking dish with cooking spray.**

Mix together flour, garam masala, cumin chili powder in a shallow bowl. Dredge fish in the mixture until coated and set aside. heat olive oil over medium heat in a large skillet. Add onion and garlic; cook until onion is soft. Stir in chicken broth, diced tomatoes with their juice,, coconut milk,,grated fresh ginger,, chopped fresh cilantro,, salt and pepper.. Bring to a boil; simmer for 10 minutes. Add fish pieces to the tomato mixture; spoon over some of the sauce so that the fish is well coated.. Bake for 20 minutes or until fish flakes easily with a fork.

Serve over steamed rice or ugali
