3/4 cup chicken broth 3/4 cup milk 1/4 cup soy sauce 1 Tbsp. rice vinegar 1 tsp. sugar 1 (14 oz.) can sliced water chestnuts, drained 8 oz. shredded Monterey Jack cheese (*or your favorite type of cheese)

Instructions:

Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish with 1 tablespoon of olive oil. In a small bowl, stir together the cornstarch and chicken broth until the cornstarch is dissolved. Set aside.

In a skillet over medium heat, heat 1 tablespoon of olive oil. Add the onions, bell peppers, garlic, and water chestnuts. Cook until the vegetables are tender-crisp, about 5 minutes.

Spread the vegetable mixture in the bottom of the prepared baking dish. Arrange the fish cubes over the vegetables. Pour the chicken broth mixture over the fish cubes.   • 1 tsp. Dijon mustard -1/4 tsp. each salt and pepper -1 lb. sliced mushrooms -3 Tbsp. grated Parmesan cheese Instructions:

1) Preheat oven to 450 degrees F (232 degrees C). 2) Dredge fish in flour mixture; shake off excess. Heat olive oil in a large skillet over medium high heat until hot. Add fish to pan; sauté for 3 minutes or until golden brown on both sides. Remove fish from pan; set aside. 3) Add onion and garlic to pan; sauté for 3 minutes or until tender. Stir in chicken broth and white wine. Bring to a boil; cook for 2 minutes or until liquid is reduced by half. 4) Reduce oven temperature to 375 degrees F (190 degrees C). Melt butter in a small saucepan over low heat; stir in flour until smooth. Gradually whisk in milk until blended. Stir in mustard, salt, and pepper; bring to a boil, stirring constantly. Boil for 1 minute or until thickened. 5) Layer fish, mushrooms, and sauce in a 13x9 inch baking dish coated with cooking spray
